Is there anyone out there, possibly of Indian descent, who can recommend a website or other source for good authentic Indian recipes? We LOVE Indian food, but there aren't any restaurants near us...

Try books by Madhur Jaffrey. Also some websites that you can use :

Another great site is www.sanjeevkapoor.com Sanjeev Kapoor is a very very famous Indian chef and has his own cooking show (he started when there were almost no cooking shows in india) on TV. His recipes are great. You can see some recipes on his website - eg. recipe of the day and few others. But to get unlimited access you have to subscribe to his site. But his site even without subscribing has soem good stuff on it.

if you like indian food then you must read the book by Amulya Malladi "Serving crazy with Curry". You can google and get details about the book.

Another option it places like Trader Joe's and Wild Oats (and even Meijer) have things you can buy like pastes and sauces that you then add other ingredients cutting down on prep time.

Try the cookbooks by Julie Sahni. She has several "Classical Indian Cooking", Vegetarian Indian cooking etc. These are fabulous and authentic.

Being a full time working mom of indian descent, I have a few favorites that I like to whip up when I can spare the time. They are very easy and quick. And best of all, SO SO DELICIOUS!!!

Here are some favorites:
SHRIMP CHILI MASALA
1/3 cup unsalted butter
6 green cardamoms, split open at the top
1 inch cube of root ginger, peeled and finely grated
3-4 cloves garlic, peeled and crushed
1 tablespoon ground coriander
1/2 teaspoon ground tumeric
1 pound raw shrimps
2/3 cup plain yogurt
1/3 cup water
1 teasp sugar
1 teasp salt
1/4 cup ground almonds (optional)
4-6 whole fresh green chili peppers
1 small onion, finely chopped
1/2 tsp garam masala
1 tablespoon chopped coriander leaves

1. melt 2/3 of the butter from the specified amt over gentle heat and add the whole cardamoms, fry for 30 seconds and add the ginger and garlic. Stir and cook for 1 minute, then add the ground coriander and turmeric. Stir and fry for 30 seconds.

2. Add the shrimps, turn heat up to medium, and cook for 5-6 minutes, stirring often.

3. Beat the yogurt till smooth, gradually add the water and beat until well blended. Add this mixture to the shrimps, stir in the sugar and salt, and cover the pan and simmer for 5-6 minutes.

4. Add the ground almonds and the whole green chili peppers, and cook, uncovered, for 5 minutes.

5. Meanwhile, fry the onions in the remaining butter, until they are just soft, but not brown. Add the garam masala and stir for a couple more minutes. Stir this mixture into the shrimps,, along with any butter left in the pan.

6. Garnish with coriander leaves!

CHICKEN IN A CASHEW SAUCE
2 onions
2 tablespoons tomato paste (or use food coloring)
1/2 cup cashews
1/1/2 teaspoon garam masala
1 garlic clove, crushed
1 teaspoon chili powder
1 tablespoon lemon juice
1/4 teaspoon ground turmeric
1 teasp salt
1 tablespoon plain yogurt
2 tablespoons corn oil
1 tablespoon chopped cilantro
1 tablespoon golden raisins (if u want)
1 pound skinless, boneless chicken breasts, cut into pieces
6 oz button mushrooms (if u want)
1/1/4 cups water
1 tablespoon chopped cilantro to garnish

1. cut onions into quarters, and blend for about 1 minute.

2. add the tomato paste, cashews, garam masala, garlic, chili powder, lemon juice, turmeric, salt, and yogurt. Blend for another 1-2 minutes or until smooth.

3. Heat oil in saucepan, and pour in the spice mixture. Fry for 2 minutes over medium/low heat. Add the cilantro, raisins, chicken, and stir fry mixture for another minute.

4. Add the mushrooms, pour the water, and bring it to a simmer. Cover and cook over low heat for approx 10 minutes or until the chicken is cooked.

5. Garnish with coriander leaves!

FISH SHAHJAHANI
1.5 pounds fillets of any white fish (i use tilapia)
3/4cup roasted cashews
1 pint heavy whipping cream (u can find it next to the half/half and milk aisle)
1 large onion chopped
4 tablespoons unsalted butter
2 inch piece cinnamon stick, broken up
4 cardamoms, split open at the top
2 whole cloves
1-2 green chili peppers, sliced lengthwise; can seed it for a milder flavor
1 tsp ground turmeric
3/4 cup warm water
1 tsp salt or to taste
1 tbsp lemon juice

1. Rinse fish, dry, and cut into 1x2 inch pieces.

2. Put cashews, whipping cream in the blender, blend till it's pretty fine.

3. In skillet, melt the butter over medium heat. Then fry onions, cinnamon, cardamoms, cloves, and the chili peppers, until the onions are lightly browned after about 6-8 minutes. Then stir in the turmeric.

4. Add the water,salt, and arrange the fish in a single layer. Bring to a boil. Then cover the pan, and let simmer for 2-3 minutes.

5. Now add the cashew/cream mixture and stir in gently, until the pieces of fish are well coated. Cover the pan again and let simmer for another 2-3 minutes. It is important to use a wide shallow skillet, so the fish can be arranged in a single layer to prevent them from breaking up during cooking.

5. Remove from heat, and stir in the lemon juice very gently. Goes well with rice.
