decide what to fix for dinner tonight...my taste buds aren't talking to me and I haven't made my menu for this week yet...

I've already done fried chicken this week...

I know for dessert we are doing S'mores... the boys have a fire pit built in the back...it's cold enough for it too...

I have chicken, beef, pork...so i'm at a loss...what sounds good?

Edit: sorry - I have pasta, rice, potatoes...lots of frozen veggies too...broccoli, spinach, carrots, corn...cauliflower...

thanks in advance! and if i don't use it tonight, I may add it to my menu for next week!!! I love to try new things!

So What Happened?

Theresa thanks!! I typically do chili and corn bread on Sunday's for football games...but it is chilly here in DC today....hhhhmmm...thanks!!!

I did this the other night..huge hit...

Mexican Lasagna
1 can of black olives, cut or whole
2 Cups of shredded chesse
1 package of taco seasoning
3 Chix breast (boil or skillet) (after cooked I cut them up into small pieces)
6 - 8Whole wheat tortillas (or regular but I'm watching the calories and healthy stuff)

Mix the olives, cheese and seasoning in a bowl, when chix is done mix that in as well.
Tortillas -tear them in halves (spray glass cooking ware) lay halves in a half moon shape, one layer of above mixings...add more halves ontop of the mix, then add another halve layer of tortillas,...so on till the third layer of tortillas on at the top...spread a little more extra cheese over, put in the oven for melting...and voila.

I'm not a cook so I don't know terminology and recipe building.

One of my favorite meals is shredded chicken, and shrimp with the curly pasta (forgot what its called), with alfredo sauce. YUM-O!

Tonight I made my hubby and I some fried wong tongs with cream cheese and sliced strawberries on top! SO SCRUMPTIOUS and easy!

Tacos with the beef or pork

Enchiladas with the chicken or just cheese enchiladas. Mexican is my favorite! :-)

Chicken Enchilada Cassarole.

Oh, since you have potatoes, bake those, open them up, slap a bit of butter inside with salt and pepper, put steamed broccoli and melted cheese on top! SO GOOD!

Steamed veggies over rice is always good. :-)

Chop that chicken up into bite sized pieces and cook it in some water....while it is cooking...make some pasta...cook some fresh carrots, celery, peas,onions, whatever veggie strikes your fancy....drain the chicken and pasta...layer the pasta in a 13x9 pan...heat up 2 cans of cream of chicken soup...at 1 - 2 cups of shredded cheddar cheese in it...add the chicken and veggies....pour all of that over the pasta...sprinkle some bread crumbs ( or crumbled potatoe chips) over the top...put it in the oven long enough to heat up...make a salad and some garlic toast....
S'mores sounds like a perfect way to finish it off

What kind of chicken beef and pork? What do you have to go with it?

I personally love www.food.com. They have a recipe sifter. It's on the far right of the menu bar in the upper part of the page. You click on it and then it lets you put the ingredients you have in and narrows down your search to recipes that contain the ingredients you have. Then you can sort them by popularity, that allows you to see the most tried and true recipes available. Each recipe that someone has tried and "graded" usually also has helpful hints, changes and substitutions posted by the people that tried it, if they changed it up. It's awesome. I have gotten some of the best recipes from there.

ETA - Sounds like you have the makings for stew or veggie soup. Chicken noodle soup is good, too. Got a great and easy recipe for that. On cold days, those are the kinds of things I want, Chilli, Stew, Veggie Beef Soup, Potato Soup, Beans and Cornbread, Chicken and Noodles, or Chicken Noodle Soup. Nothing like the feeling of something hot hitting your stomach on a chilly day. Too bad I hate winter, or it would be perfect....*sigh*

lasagna, veggie beef soup, chicken enchilada's, spaghetti, pork chops and mashed taters, tater tot casserole, stuffed peppers, spanich rice, chicken veggie casserole, fried rice with any of the meats, chili, meatloaf, chicken noodle soup, BBQ chicken in the crockpot, beef stroganof, beef and noodles, chicken and noodles.....yep, I am very hungry right now, LOL....I went grocery shopping this morning so I am trying to think of some things I got to think of recipes or meals...ooooooh, if you have smoked sausage or polska kielbasa, you could cook that with some sauerkraut and fried potatoes...maybe i'll do that one myself tonight seeing as I also dont know what to do and the kielbasa thaws pretty fast and easily...hhhmmm, so many ideas so little time

I have recently found this amazing recipe! It is sooo good. I'm going to make it tomorrow since my mom is visiting! Super easy too!

Chicken with sundried tomato, basil, and garlic

2 pounds of chicken breasts cut into large pieces
8 oz jar of sun dried tomatoes with herbs with oil
2 Tbs of dried basil
8 cloves of garlic
salt
pepper

preheat oven to 375
place chicken in large glass baking dish and toss with dried spices
sprinkle garlic and sun dried tomatoes over the top
cover and bake for 20-25 minutes
uncover and bake for another 15 minutes

(for me though I had to bake for another 30-40 minutes uncovered, it was still pink at 15 minutes)
