My daughter is using gerber nuk bottles. Does the hole need to face up against the roof of her mouth or down against her tongue?

The flat part should go to the roof of the mouth.

facing up. I verified this on the manufacturer website when I tried them with my baby. I never felt that I got a good "fit" with them as she could barely get any milk from the bottle. I switched to the playtex nurser and have had wonderful luck!

we use both the nuk bottles and pacifiers... i actually grabbed both and "matched" them to figure out where the hole should be... the flat part goes against the tongue and the hole goes up.

The hole should be facing up, with the flat part towards her tongue.
